Tempering Fish & Other Seafood
Ferrite regularly performs tempering tests on seafood and various other forms of fish. In this segment, the test is specifically geared toward 25kg blocks of frozen fish. Watch the video to see the full test results.
FMT started tempering from 7 degrees Fahrenheit, but targeted 26 degrees Fahrenheit as our final desired temperature. Then, we observed average variance of +/- 3F which is about what we would expect running a block like this through the tunnel at roughly 140 inches/minute. We also hope this video puts to rest any concerns that prospective customers have about tempering blocks of fish or other seafood. Of course, seafood filets and minced fish products will be even more uniform. This result is certainly within most acceptable temperature control boundaries.
